5 Pound Smothered Meatloaf with Mushroom Gravy and Peppers
When I take the time to make a nice meatloaf, I like to ensure there's plenty of leftovers to feed my family for two days. This recipe tastes just as yummy when individual pieces are reheated in the microwave. This blog contains affiliate links to the fantastic cookware I used to create this meal.
MEATLOAF INGREDIENTS

Step One: Mix Meatloaf Ingredients with Clean Hands
|
Step Two: Press Mixture into a Casserole Pan. Bake at 350 for 1 Hour + 15 Minutes
Let's talk about porcelain coated cast iron. It somehow stays white, no matter what I do to it. My metal casserole pans must be replaced every so often, but this iconic piece by Cuisinart has been in my collection for eight years. I cherish the beauty of this piece when it's time to set a nice table for the holidays. When company arrives, I don't like to serve beautiful food creations in ugly metal pans!

Step Three: Prepare the Mushroom Gravy
Begin this step about 15 minutes before you pull the meatloaf from the oven.
|
Step Four: Poke Holes in Your Meatloaf and Pour on the Gravy
Ready to mutilate that beautiful meatloaf? Let's go!
|
Step Five: Sauté the Onions and Peppers in Olive Oil
I could have baked the peppers along with the meatloaf, but I find that frying vegetables separately helps ensure that they won't become soggy or lose any flavor.
