Cornish Hens with Peach Glaze, Oranges and Cherries

MAIN INGREDIENTS
4 Cornish Hens 4 Tablespoons of Olive Oil 8 Tablespoons of Salt (To Soak Chickens) Salt and Pepper to Taste Chili Powder to Taste Red Pepper Flakes to Taste PEACH GLAZE 1 Cup of Peach Preserves 2 Tablespoons of Dijon Mustard 3 Tablespoons of Soy Sauce 3 Tablespoons of Honey 1 Teaspoon of Chili Powder 1 Teaspoon of Red Pepper Flakes GARNISH 2 Bunches of Parsley 2 Oranges, Sliced 2 Cups of Whole Cranberries or Cherries* *Cranberries are traditional, but my guests are more likely to devour the cooked cherries! Cranberries are often left behind on plates. |
Step One: Soak Hens in Salt Water for 30 Minutes
Salt kills bacteria and parasites, but that's not the only reason to brine your hens. A good soak will infuse your hen with flavor.

Step Two: Add Oil, Seasonings and Fruit. Bake for 25 Minutes at 400 Degrees

Step Three: Mix Ingredients for the Peach Glaze
In a small mixing bowl, combine the following ingredients:

Remove Hens from Oven and Top with Glaze. Bake 30 Minutes Longer.
