Low Carb Meals You Can Cook in Motels
What are the best low carb foods to pack for vacations in motels? How do you keep foods cold as long as possible? What kind of meals can be cooked in an electric skillet?
The secret to keeping food cold for five days and more!
If you pack frozen meat and vegetables with 20 frozen water bottles, your food should stay cold for four days, even if you don't have the most expensive cooler. High performance coolers such as the iconic Yeti can retain ice a couple days longer, but the price tag connected to such coolers can be shocking. If there's room in your cooler, include a frozen gallon of water. Huge blocks of ice take much longer to thaw than frozen bottles. I like to insert a frozen gallon at the center of my cooler and pack frozen bottles between layers of food on the sides.

Groceries I carry to make low carb meals
I like to fill my cooler with frozen packs of sausage, individually frozen hamburgers and shredded rotisserie chicken. Sometimes, I grill boneless chicken thighs at home and freeze them in ziplock bags. I also like to pack frozen broccoli, frozen cauliflower, frozen zucchini and frozen green beans. Sauerkraut is a must! For travel, I enjoy the smaller glass jars by Silver Floss. Outside the cooler, I carry things like tuna, canned mushrooms, evaporated milk, Parmesan cheese and canned water chestnuts. Here are some of my favorite motel meals:
- Frozen Sausage and Sauerkraut in a Glass Jar
- Chicken with Stir Fry Veggies and Canned Water Chestnuts
- Hamburgers Topped with Canned Mushrooms and A1 Steak Sauce
- Chicken Alfredo with Veggies (Made with Parmesan Cheese and Evaporated Milk in a Can)
- Tuna salad on a bed of lettuce with sliced tomatoes
