Garlic Parmesan Chicken Breasts - Low Carb, Keto Friendly
List of Low Carb Ingredients
|
This Low Carb Recipe Begins with a Large Electric Skillet
Step One: Score Each Chicken Breast
Make three deep cuts down the length of each chicken breast, being careful not to slice all the way through to the bottom. Larger breasts may need four cuts. Make six or seven more slashes across each piece of chicken in a horizontal direction, as shown. Season both sides of the chicken with a light sprinkling of Lawry's garlic salt or use salt and pepper.
|
Step Two: Put a Golden Sear on Both Sides of Each Breast
Add three tablespoons of butter and six tablespoons of olive oil to the heated skillet. Lay your chicken into the sizzling oil mixture. Cook the chicken until a nice golden sear develops on each side. It should take about four to five minutes per side. Transfer your golden chicken pieces to a large plate or lay them upon a clean sheet of aluminum foil.
|
Step Three: Sizzle the Onions, Garlic and Parsley in Butter
Wipe your electric skillet with a paper towel to remove the grease and chicken debris. Add three tablespoons of fresh butter to the clean skillet. Drop in the chopped onion, garlic and parsley. Stir with a rubber spatula until the onion pieces become translucent. After the onions have cooked down for about two minutes, add the drained water chestnuts.
|
Step Four: Add the Liquid Ingredients, Seasonings and Parmesan Cheese
Pour the bouillon, heavy cream and lemon juice over the sizzling onion mixture. As the liquids begin to simmer, stir in the nutmeg, garlic salt and Parmesan cheese. Taste the sauce mixture to ensure it's flavored to your liking. Different brands of garlic salt deliver more of a sodium punch than others. Lawry's is a mild brand that won't overpower your food. Add more garlic salt in small increments if your taste buds crave a stronger kick.
|
Step Five: Simmer Your Chicken in the Sauce for Five to Ten Minutes
Arrange your golden chicken pieces inside the cream sauce. Reduce heat and simmer for five minutes. Test your chicken with a fork to ensure that it's tender. If the fork doesn't slide easily into the chicken, return the cover and simmer for an additional five minutes. If you desire a thicker sauce, add more Parmesan cheese. For a thinner sauce, add more bouillon.
