Bacon Wrapped Pork Roast - Five Pound - Oven Method

ROAST INGREDIENTS
5 Pound Pork Loin Roast 1.5 Pound Package of Thick Cut Bacon 6 Teaspoons of Kosher Salt Nonstick Cooking Spray or Nonstick Aluminum Foil VEGETABLE GARNISH 2 Cups of Sliced Carrots 1 Cup of Yellow Squash Slices 1 Cup of Green Squash Slices 1 Cup of Broccoli Florets 1 Cup of Cauliflower 2 Teaspoons of Parsely Flakes 4 Tablespoons of Minced Garlic 1-2 Teaspoons of Red Pepper Flakes Salt and Pepper to Taste |
Step One: Clean, Trim and Salt the Roast

Step Two: Lay Several Bacon Strips Across a Large Cookie Sheet
Lay several bacon strips across a large cookie sheet covered with nonstick aluminum foil. A 1.5 pound package of bacon will cover a five pound roast. Be sure to overlap each peace to eliminate any gaps that could allow excess air to hit the roast while cooking. This technique is called "shingling." Shingle your bacon like a roof.

Step Three: Lay the Roast on Top of the Bacon Strips
Step Four: Draw the Ends of Each Bacon Piece Over the Roast
Carefully draw the end of each bacon piece over the top of the roast. Gently press the pieces to help the bacon stick to the meat. Don't worry if your bacon pieces don't meet in the center. When dealing with a 5 pound roast, the bacon pieces won't be long enough to form a complete wrap. If your roast is only 3 pounds, the ends of the bacon will likely match up perfectly.

Step Five: Gently Flip Your Roast to Reveal the Perfectly Wrapped Side
Bake the Roast at 250 Degrees for 30 to 45 Minutes
A bacon wrapped pork roast should be cooked slow and low at first. After about 30 minutes in a 250 degree oven, remove your roast and use a meat thermometer to ensure that the internal temperature has reached 100 degrees. If the internal temperature hasn't reached this level, put it back into the oven for a few minutes and test the temperature again.

Crank up the Heat to 475 Degrees to Crisp the Bacon
Depending upon the size of your roast and the number of bacon strips used in the wrapping process, it could take anywhere from 5 to 20 minutes for the bacon to become crisp and golden brown. Keep checking to monitor the color of your bacon. Pull the roast when the bacon reaches your desired shade of golden brown. Use a meat thermometer to be sure the internal temperature is at least 145 degrees, the standard for safe consumption of pork. In reality, the internal temperature may climb much higher by the time the bacon crisps to perfection.

Sizzle Your Veggies in Butter as the Meat Rests
Microwave or boil your vegetables to soften them to desired tenderness. Since the carrots take longer to cook, you may want to drop them in the water a few minutes earlier than the remaining vegetables. Drain the vegetables, pat them dry with paper towels and transfer them to a large frying pan coated with two tablespoons of butter. Sizzle the veggies in butter as you season with salt, pepper and red pepper flakes.
